Chocolate Mint Drops

  1. Heat oven to 325AF.
  2. Combine butter and sugar in large bowl.
  3. Beat at medium speed until creamy.
  4. Add vanilla and egg yolk; continue beating until well mixed.
  5. Reduce speed to low.
  6. Add flour; beat just until mixed.
  7. Stir in 1/3 cup baking chips.
  8. Shape dough into 1-inch balls.
  9. Place 1 inch apart onto ungreased baking sheets.
  10. Bake for 12 to 15 minutes or until bottoms just start to brown and cookies are set.
  11. Cool 1 minute on cookie sheets; remove to cooling rack.
  12. Cool completely.
  13. Meanwhile, place remaining 1 2/3 cups baking chips in 1 quart saucepan.
  14. Cook over low heat, stirring constantly, until melted and smooth.
  15. Tilt pan and dip tops of each cookie into melted chocolate; shake off excess chocolate.
  16. Place onto waxed paper.
  17. Let stand at room temperature until chocolate is set.
  18. Sprinkle with powdered sugar.
  19. Store in container with tight-fitting lid.
