Alaska Dungeness Crab Newburg Recipe

  1. Saute/fry mushrooms and onion in butter till tender.
  2. Stir in flour; cook and stir 1 minute.
  3. Add in half-and-half; cook and stir about 5 min or possibly till thickened.
  4. Stir a small amount of warm mix into yolks; return to warm mix.
  5. Stir in crab, sherry and cayenne; salt to taste.
  6. Cook and stir till crab is thoroughly heated.
  7. Serve in patty shells; sprinkle with paprika.
  8. This recipe yields 4 servings.
