At The Zoo Recipe
- 2 slc whole-wheat bread - (to 3) toasted
- 1 Tbsp. peanut butter or possibly Neufchatel cheese
- 2 Tbsp. mashed banana (or possibly 2 tbspns crushed juice-packed pineapple) Raisins, currants, or possibly dry apricots (optional)
- Press the cookie cutters firmly into the toasted bread to make an animal or possibly other shape.
- Spread with one or possibly two of the suggested toppings.
- For even more fun, use raisins or possibly currants for eyes and noses and a sliver of dry apricot for a mouth.
- If you're making shamrocks, you can spread clover shapes with Neufchatel and cover with finely minced parsley leaves.
- You can use the same technique for a holiday tree, and decorate it with raisins, dry cranberries, and minced dry fruit.
- For hearts, mix a little red food coloring and a dash of cinnamon into Neufchatel.
- This recipe yields 2 servings.
- Serving size: 1 slice.
- Comments: Try different cookie cutter shapes for various holidays: hearts for Valentine's Day; stars, trees, and bells for the winter holidays; and shamrocks for St. Patrick's Day.
