Blue Cheese Balls (Juustotahna)
- 1 12 cups crumbled blue cheese (Roquefort, Gorgonzola, or Danish Blue)
- 34 cup butter, room temperature
- 14 teaspoon Tabasco sauce or 14 teaspoon hot sauce
- 1 tablespoon minced onion
- 1 cup finely chopped toasted almond
- Combine cheese, butter, Tabasco and onion in food processor.
- Process until smooth.
- Form into walnut size balls.
- Roll in almonds.
- Chill, covered in refrigerator.
- Serve on a cheese board with crackers and rye bread triangles with sliced cherry tomatoes or radishes.
