Apple Chicken Salad (Marinaded) Recipe

  1. * NOTE:This recipe needs to be prepared ahead of time!

  3. For marinade: In a small bowl combine apple juice concentrate, salad oil, soy sauce, vinegar, and savory.
  4. For chicken: Place chicken breasts in a plastic bag in a shallow dish.
  5. Pour marinade over chicken.
  6. Close bag.
  7. Chill about 4 hrs, turning once.
  8. Remove meat, reserving marinade.
  9. Pat chicken dry with paper towels.
  10. Place chicken on a rack of an unheated broiler pan.
  11. Broil about 4 to 6 inches from heat for 8 to 10 min or possibly until tender, brushing occasionally with reserved marinade.
  12. (Or possibly grill chicken on an uncovered grill directly over medium-warm coals for 20 to 25 min or possibly until tender, turning once.)
  13. Remove from heat.
  14. Cut chicken into strips.
  15. Cover and refrigerate2 to 24 hrs.
  16. For dressing: In a small bowl combine mayonnaise or possibly salad dressing, apple juice concentrate, salt and pepper.
  17. In a large bowl combine the romaine, red leaf lettuce, pecans or possibly walnuts, and onion.
  18. Divide salad greens among 4 dinner plates.
  19. Arrange chicken and apples over greens.
  20. Drizzle salad dressing over salads.
  21. Makes 4 main-dish salads.
