Potato Salad with Bacon and Capers

  1. In a large pot over high heat, bring potatoes, 1 tablespoon salt, and enough water to cover by 2 inches to a boil.
  2. Cook until potatoes are tender and easily pierced with a sharp knife, about 25 minutes.
  3. Drain and let cool.
  4. Slice potatoes crosswise into 1/2-inch-thick rounds and transfer to a serving platter.
  5. In a small bowl, mix oil, vinegar, herbs, scallions, bacon, and capers.
  6. Pour over potatoes and toss.
  7. Season with salt and pepper.
