Red Beans and Rice
- 16 ounces, weight Kielbasa (Smoked Sausage), Cut Into 1/4" Slices
- 1 whole Onion, Chopped
- 1 whole Green Bell Pepper, Chopped
- 2 cloves Garlic, Minced
- 2 cans (15 Oz. Can) Dark Red Kidney Beans, Drained
- 1 can (16 Oz. Can) No-salt-added Diced Tomatoes
- 1/2 teaspoons Oregano
- 1/2 teaspoons Cumin
- 1 teaspoon Worcestershire Sauce
- 1 teaspoon Cajun Seasoning
- 2 whole Bay Leaves
- 1/4 teaspoons Sage
- 1/2 teaspoons Pepper
- 1/2 teaspoons Thyme
- Salt To Taste
- 2 cups Rice
- 4 cups Water
- 1.
- Cook 2 cups of rice and 4 cups water in a medium saucepan (or rice cooker).

- In a large skillet or dutch oven over low heat, cook sausage for five minutes.

- Stir in onion, green pepper, and garlic; saute until tender.
- 4.
- Pour in beans, tomatoes, and seasonings.
- 5.
- Simmer uncovered for 20 minutes.
- 6.
- Mix rice into bean mixture and serve!
