Red Beans and Rice

  2. Cook 2 cups of rice and 4 cups water in a medium saucepan (or rice cooker).

  4. In a large skillet or dutch oven over low heat, cook sausage for five minutes.

  6. Stir in onion, green pepper, and garlic; saute until tender.

  8. Pour in beans, tomatoes, and seasonings.

  10. Simmer uncovered for 20 minutes.

  12. Mix rice into bean mixture and serve!
