Lemon Pudding Cookies

  1. Preheat oven to 350F.
  2. Grease 2 large cookie sheets.
  3. Mix first 4 ingredients in large bowl until dough forms.
  4. Roll dough into 1-inch balls.
  5. Place balls 2 inches apart on prepared cookie sheets.
  6. Dip flat-bottom glass into sugar.
  7. Press glass onto dough ball and flatten into 1/4-inch-thick cookie.
  8. Repeat with remaining cookies.
  9. Bake until just golden brown on edges, about 10 minutes.
  10. Transfer to racks and cool completely.
  11. (Can be prepared 3 days ahead.
  12. Store cookies in airtight container.)
