Spicy Pepper Quesadillas

  1. Heat oven to 375F.
  2. Cook and stir vegetables and cumin in large nonstick skillet on medium-high heat 4 min.
  3. or until vegetables are crisp-tender; drain.
  4. Spray tortillas with cooking spray.
  5. Place 5 tortillas, sprayed sides down, in single layer on baking sheet; top with vegetable mixture and cheese.
  6. Cover with remaining tortillas, sprayed sides up.
  7. Bake 4 to 5 min.
  8. on each side or until quesadillas are lightly browned on both sides and cheese is melted.
  9. Cut in half.
  10. Serve with salsa and sour cream.
