Spicy Pepper Quesadillas
- 1 each small green and red pepper, cut into strips
- 1/2 cup slivered onions King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 tsp. ground cumin
- 10 flour tortillas (8 inch)
- 1 pkg. (8 oz.) KRAFT Shredded Hot Habanero Cheese
- 1/2 cup TACO BELL Thick & Chunky Salsa
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- Heat oven to 375F.
- Cook and stir vegetables and cumin in large nonstick skillet on medium-high heat 4 min.
- or until vegetables are crisp-tender; drain.
- Spray tortillas with cooking spray.
- Place 5 tortillas, sprayed sides down, in single layer on baking sheet; top with vegetable mixture and cheese.
- Cover with remaining tortillas, sprayed sides up.
- Bake 4 to 5 min.
- on each side or until quesadillas are lightly browned on both sides and cheese is melted.
- Cut in half.
- Serve with salsa and sour cream.
