Brown Sugar Braised Red Cabbage With Pears Recipe

  1. Quarter cabbage: throw away core.
  2. Cut cabbage into fine shreds.
  3. You can use the fine slicing disc of food processor or possibly cut by hand.
  4. Heat butter over medium heat in a large, deep skillet or possibly wok.
  5. Add in oil, shallots and garlic; cook 1 min without browning.
  6. Add in sugar, tomato paste, sherry vinegar and pepper; cook 1 minute, mashing tomato paste against side of pan to incorporate any clumps.
  7. Increase heat to med-hig.
  8. Add in cabbage and pears; cook, stirring frequently, till tender-crisp.
  9. Garnigh with Italian
  10. (flat-leaf) parsley, minced, if you like.
  11. Serve at once.
  12. Makes 6 servings.
