Thai-Style Steamed Mussels
- 1/2 cup unsalted butter
- 1/2 cup olive oil
- 1-1/2 gal. plum tomatoes, seeded, chopped
- 1/4 cup minced garlic
- 3 qt. canned unsweetened light coconut milk
- 3 cups Kraft Zesty Italian Dressing
- 3 cups green onions, sliced
- 1 Tbsp. salt
- 4-1/2 gal. fresh mussels, cleaned, de-bearded
- 3 cups fresh cilantro, chopped
- Heat butter and oil in large saucepan on medium-high heat until butter is melted.
- Add tomatoes and garlic; saute 2 to 3 min.
- or until garlic is tender.
- Stir in coconut milk, Sauce Works, onions and salt; cook 3 min., stirring occasionally.
- Add mussels; cover.
- Cook 3 to 5 min.
- or until mussels open.
- Discard any mussels that do not open.
- For each serving: Spoon 3-1/2 cups (875 mL) of the mussels and broth mixture into shallow bowl; sprinkle with 2 Tbsp.
- (30 mL) cilantro.
