Thai-Style Steamed Mussels

  1. Heat butter and oil in large saucepan on medium-high heat until butter is melted.
  2. Add tomatoes and garlic; saute 2 to 3 min.
  3. or until garlic is tender.
  4. Stir in coconut milk, Sauce Works, onions and salt; cook 3 min., stirring occasionally.
  5. Add mussels; cover.
  6. Cook 3 to 5 min.
  7. or until mussels open.
  8. Discard any mussels that do not open.
  9. For each serving: Spoon 3-1/2 cups (875 mL) of the mussels and broth mixture into shallow bowl; sprinkle with 2 Tbsp.
  10. (30 mL) cilantro.
