Peach Crumb Cobbler

  1. Preheat oven to 350.
  2. Spray 9-inch square deep-dish pie plate with non-stick oil.
  3. In a mixing bowl, combine peaches, sugar, lemon juice, and mint.
  4. Mix cornstarch and orange juice; let rest 15 minutes, then mix into peaches.
  5. Pour peach mixture into prepared pie plate.
  6. Mix flour with brown sugar and cinnamon.
  7. Use a pastry cutter to cut margarine into flour until mixture resembles course crumbs.
  8. Sprinkle over peaches.
  9. Bake 45 minutes.
  10. Serve hot.
