Potato Cheese Braid
- 1 ounce active dry yeast (1 package)
- 2 34 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons instant mashed potatoes, granules
- 14 cup water
- 13 cup milk
- 14 cup butter or 14 cup margarine
- 2 eggs
- 1 12 cups shredded sharp cheddar cheese
- additional butter or margarine
- In medium bowl, mix yeast, 3/4 cup of the flour, the salt, sugar and potato granules.
- Heat water, milk and butter to very warm (butter need not melt).
- Add to first mixture.
- Beat at medium speed for 2 minutes.
- Add eggs and 1/4 cup more flour.
- Beat at high speed for 2 minutes.
- Stir in cheese and enough flour to make a soft dough.
- Turn out on lightly floured surface.
- Knead until smooth and elastic.
- Put in oiled bowl, turning to oil top.
- Cover with a sheet of plastic wrap.
- Let rise in warm place for 45 minutes or until doubled.
- Punch dough down.
- Divide into 3 portions.
- Roll each portion into an 18-inch strand.
- Braid loosely on greased baking sheet, sealing ends.
- Let rise in warm place for 30 minutes or until almost doubled.
- Bake at 375 for 30 minutes or until golden brown.
- Brush with butter, if desired.
- Cool on wire rack.
