Pomegranate Blueberry and Goat Cheese Crostini
- 1/2 cups Pomegranate Juice
- 2 cups Frozen Blueberries
- 1/2 whole Lemon, Juiced
- 1/4 cups Sugar
- 1 Tablespoon Honey
- 1 pinch Cinnamon
- 1/2 whole Pomegranate (seeds Only)
- 1 whole Baguette, Sliced Into 1/4-1/2 Inch Slices, Toasted
- 1 log Goat Cheese (8 Ounce Log), Softened
- Honey For Drizzling
- Place pomegranate juice, blueberries, lemon juice, sugar, honey and cinnamon in a small saucepan.
- Bring to boil.
- Reduce heat to low and simmer until fruit is softened and mixture is thick and syrupy, about 10 minutes.
- Remove pan from heat and allow fruit to cool slightly.
- Stir in pomegranate seeds.
- Mixture can be served warm or at room temperature.
- To serve: Spread toasted baguette slices with softened goat cheese.
- Top with a teaspoon of fruit mixture and drizzle with honey.
- Serve warm or room temperature.
