Zippy Orange Chicken & Rice
- 1/2 cup MIRACLE WHIP Light Dressing, divided Family Dollar $3.50 thru 02/07
- 12 oz. boneless skinless chicken breast
- 1 medium green pepper
- 8 fl oz (1 cup) orange juice
- 2 Tbsp. packed brown sugar
- 1-1/2 cups instant white rice, uncooked
- 1 cup canned mandarin oranges (in juice)
- 1 cup canned pineapple chunks (in juice)
- 2 cups chopped frozen broccoli
- 1 Tbsp. trans fat free canola-based soft margarine
- 4 s, Favorite Flavor
- 32 fl oz (4 cups) fat-free milk
- Heat 2 Tbsp.
- of the dressing in skillet on medium-high heat.
- Add chicken and peppers; cook and stir 5 min.
- or until chicken is cooked through.
- Drain.
- Reduce heat to medium.
- Stir remaining dressing, orange juice and sugar into skillet; bring to boil.
- Remove from heat; add rice, oranges and pineapples.
- Let stand, covered, 5 min.
- Heat broccoli as directed on package; top with margarine.
- Enjoy JELL-O for dessert (1 per serving).
- Serve each person an 8 fl oz glass of milk with meal.
