Creamy Spinach Lasagna Recipe

  1. About 1 1/2 hrs before serving, prepare noodles as directed on package.
  2. Meanwhile, in a 10 inch non-stick skillet over medium heat, cook onion, mushrooms and garlic for about 5 min; remove from heat and stir in spinach, oregano, basil and black pepper,; set aside.
  3. In food processor, blend cottage cheese, egg whites, flour, and 1 c. Mozzarella cheese till smooth.
  4. Preheat oven to 375 degrees.
  5. In a 13 x 9 inch baking dish, arrange 3 noodles; top with half of spinach mix, and half of tomato sauce.
  6. Arrange 3 more noodles; repeat layers.
  7. Top with remaining Mozzarella cheese Parmesan.
  8. Bake 45 min or possibly till bubbly.
  9. Remove from oven and let stand 10 min.
  10. Serves 12.
