Sophie's peanut and chocolate marble cupcakes
- 110 grams softened butter
- 110 grams caster sugar
- 2 eggs
- 1 tsp vanilla essence
- 110 grams self raising flour
- 2 tbsp milk
- 1/2 cup cocoa
- 1/4 cup chocolate chips
- 140 grams softened butter
- 200 grams icing sugar
- 1 1/2 tbsp milk
- 100 grams cocoa
- Preheat oven to 180C.
- Cream the butter and sugar together, and then add the vanilla extract, milk and eggs.
- Mix thoroughly.
- Fold the flour into the mix until smooth.
- Split your mix evenly between two bowls.
- Mix peanut butter into one and cocoa into the other.
- Add a small spoonful of each mix to each case.
- Swirl gently with a skewer or toothpick - don't fully mix it.
- Add another dollop of each mix and repeat - your case should be about half full.
- Bake for approximately 15 minutes or until a skewer comes out clean.
- For the frosting: beat the butter and half the icing sugar together.
- Once mixed, add the other half of your icing sugar and the milk (add the milk gradually, stopping if it gets to the right consistency).
- Leave to one side in a cool place.
- After your cupcakes are cooled, frost them and top with Reece's pieces.
