Asparagus Chicken Oriental

  1. Heat the oil in a Chinese wok or electric.
  2. skillet.
  3. Cut the chicken into one-inch chunks and stir-fry until done.
  4. Remove from wok and set aside.
  5. Cut the jumbo asparagus into two-inch strips.
  6. Add the remaining onion, bell pepper, pepper and sugar; cook, stirring until until the vegetables are crisp-tender.
  7. Add the asparagus , then the chicken.
  8. Sprinkle with soy sauce; cover and cook until mixture begin to steam.
  9. Reduce the heat and simmer for about 12 minutes.
  10. Serve over rice, if desired.
