Simple Pesto Brunch Bake

  1. Grease baking dish with non stick baking spray or some butter.
  2. Place bread slices into dish and spread tomato basil over bread.
  3. Drizzle melted garlic and herb butter over bread.
  4. In a separate bowl combine eggs,milk, basil pesto and dijon mustard.
  5. Season with salt and pepper to taste and beat well.
  6. Pour egg mixture over bread.
  7. Layer sliced tomatoes over mixture.
  8. Sprinkle with some mixed dried herbs.
  9. Bake at 220AC until set.
  10. Approximately 15 minutes.
  11. Remove from oven and top with grated cheese and a sprinkle of paprika.
  12. Grill in oven until cheese is melted.
  13. Serve with side of bacon and sauteed mushrooms.
