Carribean Shrimp Salad
- 1 lb extra jumbo frozen cooked shrimp
- 1 large tomatoes
- 1 onion
- 1 green pepper
- 1 orange
- 1 lemon
- 1 lime
- 1 red pepper flakes
- 1 pinch salt
- 12 cup Baby Spinach
- run cold water over the frozen shrimp to defrost.
- cut onions tomato green pepper in small bie size pieces.
- Put shrimp and the cut up veggies in bowl.
- cut the orange lime and lemon in half and squeeze the juice of each in the bowl.
- Add salt pepper and red pepper flakes cover the bowl and marinate either overnight or for an hours.
- To seve place spinach at the bottom of a plate or bowl and pour the shrimp salad over spinach be sure to pour the juice on top.
- Enjoy.delicious healthy and refreshing.
