Sesame Spinach
- 2 (12 ounce) packages frozen leaf spinach
- 14 cup soy sauce
- 2 tablespoons cider vinegar
- 14 teaspoon sugar
- 1 medium onion, cut into rings
- 2 tablespoons sesame seeds
- Cook spinach according to pkg.
- directions; do not overcook.
- Combine soy sauce, vinegar and sugar.
- Drain spinach and add onion rings; add soy sauce mixture and toss.
- Chill for 1 hour, tossing frequently.
- Serve in portions as a salad; garnish with toasted sesame seeds just before serving.
- Note: To toast sesame seed, gently heat a 2-3 oz.
- box sesame seed in small skillet.
- Stir frequently until each seed is toasted but not burned.
- Press seed using the bottom of a water tumbler to extract oil and enhance flavor.
