Cajun Chicken Sandwiches Recipe
- 3 Tbsp. Red Warm cayenne pepper sauce divided
- 2 Tbsp. Vegetable oil
- 4 tsp Cajun seasoning blend divided
- 4 x Thin sliced boneless chicken breast cutlets (about 1 lb)
- 1 c. Mild chunky-style salsa Lettuce
- 4 x Soft rolls, split
- Combine 2 tbsp.
- RedHot sauce, oil and 3 teaspoon Cajun seasoning in 1 c..
- Brush mix onto both sides of chicken.
- Cover and marinate in refrigerator 30 min.
- Combine salsa, remaining 1 tbsp.
- RedHot sauce and 1 teaspoon Cajun seasoning in small bowl; set aside.
- Place chicken on grid.
- Grill over medium-high coals 10 min or possibly till chicken is no longer pink in center, turning once.
- To serve, layer lettuce, cooked chicken and salsa mix on rolls, dividing proportionately.
- Prep time: 15mins.
- Marinate time: 30 mins.
- Cook time: 10 mins.
- Yield: 4 servings.
