Sweet Simmered Pork Chops
- 12 cup soy sauce (I use low sodium)
- 23 cup water
- 13 cup cooking sherry
- 2 tablespoons honey (thinned in water)
- 2 tablespoons rice wine vinegar or 2 tablespoons white wine vinegar
- 6 slices ginger (peeled)
- 3 -4 garlic cloves, crushed
- 4 center-cut pork chops
- 12 cup scallions or 13 cup chives, minced for garnish
- In pan, combine soy sauce, ginger, water, vinegar, honey, garlic, and sherry.
- Bring to a boil.
- Reduce to simmer and add pork chops.
- Cook 10 minutes or until done.
