Yummy Low Fat Mac and Cheese
- 2 cups uncooked elbow macaroni
- 2 cups low fat cottage cheese
- 14 cup butter, softened
- 1 tablespoon minced garlic
- 6 ounces shredded low-fat cheddar cheese
- 1 cup chopped spinach (fresh or frozen)
- 1 dash sriracha sauce or 1 dash hot sauce
- salt
- pepper
- 2 cups boiling water
- Combine all ingredients except water in oven proof 2 quart casserole dish.
- Mix well.
- Pour boiling water over mixed ingredients.
- Bake at 350F for an hour.
- Allow to sit for 10 minutes before serving.
