Fragrant Sweet Swirls ( Shira Jilapi)
- 1 1/2 cup all-purpose flour
- 1 1/2 cup rice flour
- 500 ml milk
- 1 egg
- 2 tbsp vegetable oil or butter oil( for kneading)
- 1/2 tsp vanilla extract
- 1 oil for deep frying
- 2 1/2 cup granulated sugar
- 6 cup water
- 2 star annies
- 1 stick cinnamon
- 2 whole cardamon ( pod opened)
- Strain rice and all purpose flower to mix well.
- Keep aside.
- Bring milk to boil and reduce a little.
- Reduce heat and add the strained flower slowly over flame and mix well until forms a soft dough (might feel a little dry but that will be OK when you add egg and oil later).
- Remove from heat, add vanilla, whole egg and oil ( knead while the dough still warm otherwise it won't be smooth and soft)
- Divide into small pieces (u can make 20 pieces or more from the dough).
- Take a roller board and spread Lil oil on it so that the dough doesn't stick while rolling.
- give a rope shape and then shape like a coil.
- Secure the end so that it doesn't uncoil while frying & soaking in syrup.
- In a saucepan take water, put spices of syrup list and bring to boil.
- After some time remove star Annie's from boiling water or the flavor will be too strong.
- Add sugar, dissolve and boil some more time to reduce the water.
- Reduce heat and keep shimmering.
- Deep fry the swirls till brown and keep in a large bowl.
- Pour the syrup over fried swirl and immerse those completely in syrup.
- Let it cool and then keep in fridge for 3-4 hours or overnight.
