14 Karat Cake Recipe
- 2 c. flour
- 2 tsp baking pwdr
- 1 1/2 tsp baking soda
- 1 1/2 tsp salt
- 2 tsp cinnamon
- 1 c. brown sugar
- 4 x Large eggs
- 1 1/2 c. oil
- 1 c. sugar
- 2 c. carrots, grated
- 1 can crushed pineapple, (8 ounce.) liquid removed
- 1 1/2 c. nuts, minced
- 1 can coconut, (3 1/2 ounce.) optional
- 1/2 c. butter
- 8 ounce cream cheese
- 1 tsp vanilla
- 1 lb powdered sugar
- 1 tsp orange juice, optional
- 1 tsp orange rind, optional Combine flour, baking pwdr, baking soda, and salt. Add in remaining ingredients, including coconut, if desired Grease and flour three 8-inch pans Bake at 350 degrees for 35-40 min Cold thoroughly before frosting.
- ORANGE CREAM CHEESE FROSTING:Cream butter, cream cheese, vanilla and powdered sugar together and spread on cake.
