Chicken Parmesan
- 1 pkg. boneless skinless chicken breast
- 1 to 2 env. McCormick's Italian seasoning marinade mix (ingredients for this are listed on package)
- 1 jar spaghetti sauce (your choice)
- 1 to 2 pkg. pasta (your choice -- I prefer penne)
- 1 to 2 eggs lightly beaten
- 1 bottle shredded parmesan cheese
- Use the larger amounts on all ingredients if you buy the family size pack of chicken.
- Preheat oven to 375F.
- Prepare marinade according to directions on package; add chicken.
- Prepare pasta.
- Put beaten egg into a bowl and add some of the cheese on a plate or in a separate bowl.
- Dip chicken in egg, then dip in cheese covering the entire piece completely.
- Place chicken flat in deep baking dish.
- Sprinkle about 1/2-1 cup of the remaining cheese on top of chicken.
- Pour sauce around the edges of chicken but not on top.
- Cover and bake for about 45 minutes or until done.
- Do not over-bake or burn cheese on top.
- Serve pasta on the side with sauce on top of pasta and chicken if desired.
- Top dish with more cheese for extra cheesy flavor.
