Jambalaya
- 2 tbsp olive oil
- 1 packages kielbasa sausage
- 1 small onion
- 1 green pepper
- 2 clove garlic
- 14 oz can diced tomatoes & green Chiles
- 3 cup scallion rice
- Heat 1T evoo in lg skillet, add sausage, cook till browned.
- Transfer to plate.
- Reduce heat to med, add other evoo.
- Add onion & green pepper (thinly sliced) about 4 min.
- Add 2 cloves garlic & pepper, cook until onions are tender, 4-5 min.
- Add tomatoes and rice.
- Cook till heated through.
- Put sausage in & heat.
