Spicy Butter Thins
- 6 ounces butterscotch chips
- 12 cup butter
- 34 cup flour
- 14 cup sugar
- 1 teaspoon cinnamon
- 1 teaspoon instant coffee
- 12 teaspoon ginger
- 1 egg
- 12 cup chopped salted peanuts
- In large saucepan, melt 2/3 cup butterscotch chips and butter over low heat, stirring constantly.
- Remove from heat.
- Add everything else except peanuts.
- Blend well.
- Spread in a well-greased 15x10 jelly roll pan.
- Sprinkle with remaining 1/3 cup butterscotch chips and peanuts.
- Bake at 300 for 20 - 25 minutes.
- Cool; cut into bars.
