Low(Er) Fat Chocolate Fudge Cupcakes
- 1 12 cups unbleached flour
- 1 cup sugar
- 34 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 1 cup applesauce
- 2 egg whites
- 14 cup vegetable oil
- 12 teaspoon vanilla extract
- 12 cup chocolate chips
- Preheat oven to 350.
- In medium bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine applesauce, egg whites, oil, and vanilla; beat until blended.
- Add flour mixture to applesauce mixture and stir just until evenly moistened.
- Do not overmix.
- Stir in chocolate chips.
- Spoon batter into 12 oiled or paper lined muffin cups.
- Bake for 25 minutes, or until centers spring back when pressed lightly.
- Do not overbake!
- Cool on a wire rack.
