Chickpea, Orange-Mint and Feta Salad

  1. Remove the pith off the orange with a sharp knife, then thinly slice.
  2. Whisk together the vinaigrette ingredients.
  3. In a salad bowl toss the vinaigrette ingredients together with the oranges and remaining salad ingredients.
  4. Set salad aside to marinate for about 30 minutes.
  5. Season with cracked black pepper to taste.
  6. Garnish with fresh orange mint leaves.
