Bittersweet Truffle Bites

  1. Heat oven to 375F.
  2. Combine cookie crumbs and sugar in bowl; stir in melted butter.
  3. Pat onto bottom of ungreased 13x9-inch baking pan.
  4. Bake 8-10 minutes or until set.
  5. Cool completely.
  6. Melt chocolate in 1-quart heavy saucepan over low heat; stir until smooth.
  7. Remove from heat.
  8. Cool slightly.
  9. Beat cream cheese at medium speed in bowl until creamy.
  10. Add powdered sugar, whipping cream and liqueur; continue beating until well mixed.
  11. Increase speed to high.
  12. Beat for 2 minutes.
  13. Add melted chocolate; continue beating until well mixed.
  14. Spread over cooled crust.
  15. Refrigerate at least 2 hours until firm.
  16. Sprinkle with cocoa powder.
  17. Cover; refrigerate until serving time.
  18. Cut into small squares; place in mini foil baking cups.
  19. Store refrigerated.
