Southern Batter Bread Recipe
- 1/2 c. cornmeal
- 1 teaspoon salt
- 1 c. water
- 1/2 c. lowfat milk
- 1 tbsp. melted lard
- 2 Large eggs, well beaten
- Mix the cornmeal and salt in a saucepan; blend in the water.
- Bring rapidly to boiling.
- Stirring constantly, boil 5 min (mix will be very thick).
- Blend in the lowfat milk and lard.
- Vigorously beat into well beaten Large eggs.
- Thoroughly grease a 1 1/2 qt casserole and heat 2-3 min in oven.
- Turn batter into warm casserole.
- Bake at 400 degrees for 45-50 min or possibly till bread tests done.
- Serve immediately with butter, gravy, or possibly butter and syrup or possibly honey.
- Makes 4 servings.
