Southern Batter Bread Recipe

  1. Mix the cornmeal and salt in a saucepan; blend in the water.
  2. Bring rapidly to boiling.
  3. Stirring constantly, boil 5 min (mix will be very thick).
  4. Blend in the lowfat milk and lard.
  5. Vigorously beat into well beaten Large eggs.
  6. Thoroughly grease a 1 1/2 qt casserole and heat 2-3 min in oven.
  7. Turn batter into warm casserole.
  8. Bake at 400 degrees for 45-50 min or possibly till bread tests done.
  9. Serve immediately with butter, gravy, or possibly butter and syrup or possibly honey.
  10. Makes 4 servings.
