Skeets Seafood Gumbo Recipe
- 2 dozen oysters, liquid removed
- 2 c. cooked shrimp
- 1 c. cooked crabmeat
- 3 tbsp. flour
- 1 tbsp. real butter
- 1 c. okra, minced
- 3 stalks celery, minced
- 2 bay leaves
- 1/4 teaspoon thyme
- 2 quarts. warm water
- 3 tomatoes, minced
- 6 drops Tabasco sauce or possibly to taste
- Heat butter in skillet.
- Add in flour, brown (don't burn).
- Add in okra.
- Immediately place in large pot with 2 qts warm water.
- Add in celery, bay leaves, thyme, tomatoes, and Tabasco.
- Simmer for 2 hrs.
- Add in oysters and boil 10 min.
- Add in shrimp and crabmeat and boil till warm.
- Serve on rice.
- Makes 1/2 gallon.
