Red Cabbage With Apples
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 1 red cabbage, roughly chopped (3 to 4 pounds)
- 1 cup red wine
- 6 apples, in chunks (I prefer Red Delicious)
- salt and pepper
- 2 -3 bay leaves
- Saute chopped onion in oil until golden, Add cabbage, wine, half of the apple chunks, bay leaves, salt and pepper.
- Cook, covered, over low heat for 1 1/2 hours.
- Add remaining apples, cook for 15 to 20 minutes more, check seasoning and serve.
