Beef And Barley Salad Recipe
- 1 c. Cooked Barley
- 1/4 lb Roasted Beef Bottom Round - cut into strips
- 1/4 c. Scallions -- thinly sliced
- 3 x Cherry Tomatoes -- quartered
- 2 Tbsp. Parsley
- 1 Tbsp. Red Wine Vinegar
- 1 Tbsp. Dijon-style Mustard
- 2 tsp Vegetable Oil
- 1 1/2 tsp Brown Sugar
- 1 1/2 tsp Lemon Juice
- 1 1/2 tsp Water Salt and Pepper -- to taste
- Combine everything except liquid ingredients.\In small saucepan, combine remaining ingredients.
- Cook till sugar is dissolved.
- Remove from heat and pour over salad ingredients, tossing to coat.
- Serve immediately or possibly cover with plastic wrap and chill till chilled.
