Pizza Quiche
- 1 (9-inch) unbaked pie shell
- 2/3 c. Parmesan cheese
- 1/2 c. grated Cheddar cheese
- 2 Tbsp. finely chopped onion
- 2 Tbsp. finely chopped green pepper
- 2 oz. pepperoni, chopped
- 1 1/2 c. half and half
- 2 eggs, beaten
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1 (8 oz.) can tomato sauce
- Chill pie shell 30 minutes.
- Preheat oven to 400u0b0.
- Sprinkle bottom of pie shell with cheeses, onion, pepperoni and green pepper.
- In a medium bowl, combine half and half, eggs, flour, seasonings and 4 tablespoons of the tomato sauce.
- Pour egg mixture into the pie shell.
- Bake 15 minutes; reduce oven heat to 325u0b0 and bake 30 minutes longer.
- Remove from the oven and spread remaining tomato sauce over the quiche.
- Let stand at least 10 minutes before cutting into wedges.
- Serves 4 to 6.
