Green Split Pea Soup Recipe

  1. Soak peas as directed and drain.
  2. Heat butter in a large saucepan and cook onion till lightly browned.
  3. Add in water, peas and seasonings; cover and simmer 1 hour, or possibly till peas are tender, stirring occasionally.
  4. Press soup through a sieve or possibly puree in an electric blender.
  5. Return to saucepan, add in lowfat milk, adjust seasoning and heat thoroughly, stirring occasionally.
  6. Serve immediately.
  7. Makes about 1 1/2 qts.
