French Mint Cupcakes

  1. Melt chips; cool and set aside.
  2. Beat butter, using electric mixer.
  3. Add sugar.
  4. Add cooled chocolate, beat 5 minutes.
  5. Beat in eggs, one at a time.
  6. Mix in vanilla and peppermint extract.
  7. Sprinkle nuts on bottom of 24 paper holders in cupcake pan.
  8. Fill each cupcake holder half full.
  9. Sprinkle with nuts.
  10. Freeze for at least 3 hours.
