Potatoes a L'alsacienne

  1. Peel potatoes and cut into 1 inch cubes.
  2. Place in pot & cover with salted water.
  3. Bring to boil & cook 5 minutes.
  4. Drain and set aside.
  5. Melt margarine in skillet.
  6. Add olive oil, onions and bacon.
  7. Cook 5 minutes.
  8. Add potatoes.
  9. Cook 10 minutes until tender and crisp.
  10. Add herbs, salt and pepper.
  11. Mix well.
