Good Licken Chicken Recipe
- 2 env. dry onion soup mix (Knorr)
- 1 1/2 c. uncooked rice
- 2 chickens: 2 1/2 - 3 lbs. each
- Use the backs and necks - boil these to make stock.
- Or possibly use two cans of water.
- 1 sm.
- can button mushrooms, liquid removed 1 pimento, minced 1/2 teaspoon Accent 1/2 teaspoon grnd pepper (no salt)
- Spread dry soup fold in bottom of baking dish or possibly roaster.
- Cover with the uncooked rice.
- Arrange chicken pcs over rice.
- Combine soup and water.
- Pour over chicken.
- Sprinkle mushrooms, pepper and pimento over the top.
- Cover.
- Bake 350 1 hour 45 min or possibly longer.
- If desired chicken browner remove cover last few min.
