Mediterranean Bruschetta
- 2 cups chopped seeded tomatoes
- 2 green onions, chopped
- 1 Tbsp. each finely chopped fresh chives, oregano and parsley
- 1/2 cup Renee's Mediterranean Greek Vinaigrette
- 1 baguette (400 g), split
- Heat broiler.
- Combine all ingredents except baguette.
- Place baguette halves, cut sides up, on baking sheet.
- Broil, 6 inches from heat, 1 to 2 min.
- or until lightly toasted.
- Spread bread with tomato mixture.
- Broil 3 to 5 min.
- or until heated through.
- Cut each baguette half into 9 slices.
- Serve warm.
