Tomato and Artichoke Salad

  1. In a bowl whisk together Dijon and balsamic vinegar, gradually whisk in the olive oil.
  2. Season with salt and pepper.
  3. Toss vegetables with vinaigrette and parsley, transfer to serving bowl.
