Guyane Pepper Pot Recipe
- 1 pound short beef ribs
- 2 pigs feet, split
- 2 pound stew beef
- 2 pound oxtails
- 1 onion, cut up
- 1 fig garlic
- 1 lg. spoon sugar
- 1/8 teaspoon spice
- 1/4 teaspoon black pepper
- 2 lg. pot spoons caspeep (found in West Indian stores)
- Water
- Wash all meats thoroughly.
- Put in large pot.
- Add in all remaining ingredients.
- Put water to cover meats.
- Cook over medium heat till meats are tender.
- Cook over low heat, about 2 to 3 hrs.
- This dish could be eaten with cooked rice.
