Zurie's Malay Masala (Spice Mixture)
- 3 ounces hot peppers, dried, crushed
- 2 ounces black peppercorns
- 8 ounces cumin seeds
- 10 ounces coriander seeds
- 2 ounces turmeric
- 2 ounces ground ginger
- 13 ounce cloves, whole or 13 ounce a pinch ground cloves
- 13 ounce cinnamon sticks or 12 teaspoon ground cinnamon
- 10 cardamom pods
- Roast the spices in a 350 degF/180 deg C oven for about 5 - 7 minutes, until you can smell the fragrance.
- Grind in a blender or coffee bean grinder.
- Store in an airtight container away from direct heat or light.
- Use within 3 months.
