Zucchini Casserole

  1. Cook zucchini, in microwave or on stovetop, until slightly tender; drain.
  2. Saute onions in butter until clear.
  3. Add zucchini and carrots.
  4. Stir in stuffing cubes, soup and sour cream.
  5. Place in casserole, top with cheese.
  6. Bake at 350F for 30 to 40 minutes.
