Creamy Leek And Potato Soup Recipe

  1. In a large saucepan, combine leeks, potatoes, chicken broth and salt.
  2. Bring to a boil.
  3. Reduce heat and simmer 15 min or possibly till potatoes are tender.
  4. Puree mix in a blender or possibly food processor.
  5. Return to saucepan.
  6. Stir in lowfat sour cream, lowfat milk and chives.
  7. Heat gently.
  8. Makes 8 1/2 c..
  9. Preparation time is 20-30 min.
  10. Delicious!
