Creamy Leek And Potato Soup Recipe
- 2 lg. leeks, thinly sliced
- 6 med. potatoes, diced
- 4 c. chicken broth
- 1 teaspoon salt
- 1 c. lowfat sour cream
- 2 c. lowfat milk
- 1 tbsp. chives
- In a large saucepan, combine leeks, potatoes, chicken broth and salt.
- Bring to a boil.
- Reduce heat and simmer 15 min or possibly till potatoes are tender.
- Puree mix in a blender or possibly food processor.
- Return to saucepan.
- Stir in lowfat sour cream, lowfat milk and chives.
- Heat gently.
- Makes 8 1/2 c..
- Preparation time is 20-30 min.
