Almond Toffee Sandies
- 1 cup room temperature butter (no substitutes)
- 1 cup sugar
- 1 cup powdered sugar
- 1 cup vegetable oil or 1 cup canola oil
- 2 eggs
- 1 teaspoon almond extract
- 3 12 cups all-purpose flour
- 1 cup whole wheat flour or 1 cup all-purpose flour
- 1 teaspoon baking soda, minus 1 pinch
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 2 cups chopped almonds
- 1 (6 ounce) packageenglish toffee pieces
- 14 cup sugar, for rolling

- Pre-heat oven to 350 degrees.

- In Large mixing bowl, cream butter and sugars.
- Add oil, eggs & almond extract; mix well.

- In separate bowl, combine flour(s), baking soda, cream of tartar and salt.
- Sift twice before adding gradually to creamed mixture till well combined.
- Stir in almonds and toffee bits.
- 4, Shape into 1 in balls, roll in sugar and place on UNGREASED or parchment lined baking sheet pans, flatten w/fork.
- Bake @ 350 degrees for 12 - 14 minute or until lightly browned.
