Biscuit Taco Cups

  1. Preheat oven to 400
  2. Brown ground beef.
  3. Drain.
  4. Add taco seasoning & cook per packet instructions.
  5. Spray muffin tins with nonstick cooking spray.
  6. Press biscuits flat into hands & push into bottom & sides to top of each muffin tin.
  7. Sprinkle a bit of cheese on bottom of each cup.
  8. Evenly spoon beef mix into each cup.
  9. Top each cup with a teaspoon of sour cream.
  10. Lightly spread.
  11. Sprinkle cheese on top - if you can't fit it all on - reserve a bit.
  12. Bake for 10 mins - sprinkle on remaining cheese if need be so - bake for another 3 minutes.
  13. Let cool for a minute or two.
  14. Use butter knife to "loosen" up around the edges to remove easier.
  15. Serve with salsa & additional sour cream....enjoy.
  16. ***Variations*** You can use less ground beef, mix extra cheese to beef & fill cups.
  17. Or try adding taco sauce, salsa, jalapenos, some blackbeans....whatever you'd like.
