Gluten-Free Gingerbread Muffins
- 12 cup soy flour
- 14 cup amaranth flour
- 34 cup potato starch
- 12 teaspoon cinnamon
- 12 teaspoon ginger
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 18 cup sucanat
- 18 cup applesauce
- 18 cup vegetable oil
- 12 cup molasses
- 1 egg, beaten
- combine dry ingredients,.
- then add to wet.
- Add about 1/4 cup of milk for consistency.
- Bake at 350F for twenty minutes.
